Buckwheat Groats

I am currently in the process of dehydrating buckwheat groats. My mother-in-law introduced me to them. She is a raw foodie and my favorite source for new ideas.
Here is the recipe:

Buckwheat Groats

Soak buckwheat groats in water for two minutes, rinse and soak again for six hours. Drain and dehydrate. Keep in a sealed container.

Sprinkle on yogurts, salads, whatever... they taste great by themselves and are good for making raw dessert recipes. My mother-in-law is going to try using them to make a raw crunchy bar. If it turns out, I may post it on my blog.

Remember not to soak longer than six hours. The groats may start to sprout if you don't take them out of the water in time.

Nutritional Facts on Buckwheat Groats:
High in calcium, iron, phosphorus, potassium and B vitamins
Low glycemic, low fat, high fiber
They contain rutin which helps lower cholesterol levels.
They are less expensive than (and can be substituted in some raw recipes) that call for nuts.
Buckwheat groats have all eight essential amino acids so they are a complete plant-based protein source
